The wines which we produce are the result of a knowledge and a passion passed on by generation in generation. This experience is, of course, completed by a robust forming to the more and more sharp modern techniques of wine growing and eonology.

We cultivate our vines in a reasoned way. We employ only the minimum necessities of weedkillers and treatment products. We almost use natural and organic fertilizers rather than artificial. 

Our grapes are exclusively harvested by manual crop and are pressed on a traditional vertical wine-press  to get the very best quality of must and easier débourbage

We take care that our wines remain authentic and  keep their personality: no filtrations, no artificial cooling, fermentations and clarification are naturally made.

In spring following the harvest, we proceed to the assemblages (blending) before the bottleling, made completely in the property.

Bottles are going to stay several years sur lattes in the darkness and cool of our cellars. Now it is time for the prise de mousse.

The next operations will be the "remuage"( bottles are turned on wooden "pupitres" to make go down the deposit  to the neck), the "dégorgement"( sediment is expeled out of the bottle) and the "dosage":  we add a little quantity of a liquor made of old wines and cane sugar to make BRUT (a little sweetened) or DEMI-SEC( much more sweetened). Finally the bottle is corked.  

After another few months, champagne will be labeled and so, ready to leave our cellars... 

 

As you can notice, from the plantation of the stock up to the ended bottle, we make everything by ourselves.
